If interested in innovative food in the sushi realm, CRUDO was excellent (and cash-only) when I was there two years ago.
It is very small, fairly expensive, and no signage — If I remember correctly, you have to make a reservation to get in to one of two seatings.

“Las Quince Letras” !!! Excelente Mole. The chef was recognized as one of the 50 best in Latin America.

I was so disappointed in the moles. Even the best restaurants apparently cooked the mole separate from the meat/ chicken, etc. adding the sauce to fill the order.
So, instead of being steeped in the sauce, the meat was just that.
Sauces/ moles were divine.
